I was extremely hesitant to start the keto diet. It took me months before I decided I would give it a try. I look at it more of a lifestyle change rather than diet, because it’s teaching me how to eat overall better foods. My long term goal is to transition to a low carb lifestyle vs. a strict 20 carbs or less diet.

You Don’t Have To Be On The Keto Diet TO Enjoy These

My favorite part about keto or low carb recipes is that anyone can enjoy them. Lately, I have been cooking up new recipes and sharing with my fiance. He loves my food just as much as what he eats!

This article details ten of my favorite keto/low carb recipes I have been making while in quarantine: 10 Keto/Low Carb Recipes To Help You Lose Weight. My fiance has tried all of these and loves them all!

Even though the keto diet may help you slim down and feel great, you need to be careful when you have a cheat meal/day. My suggestion to anyone starting the diet is to stick with it and slowly transition to just a healthier way of eating if you are going to start adding more carbs into your diet.

Lets Get Started On These Avocado Onion Rings!

Serving size: 12 avocado onion ring snackers

NET CARBS: 12 net carbs for ALL 12 avocado onion ring snackers

Ingredients:

Preparation

  1. Slice your red onion in half to get “onion rings”. I personally cut mine a little thicker for a stronger wall to hold the avocado in.
  2. Mash up 1 whole avocado. You may add onions, cilantro or anything else you like in your guacamole, but I just used the avocado itself.
  3. Place your onion rings on a plate, and fill them with the avocado/guacamole you just mashed up. I found that the smaller rings worked better in the long run and held together better. I also liked the bite size aspect better.
  4. FREEZE! This step is important in order to keep the avocado ring together when adding the breading. I froze overnight, but you really only need to freeze until avocado is hardened.

Making the Breading

  1. Mix 1/4 cup of coconut flour, 1/2 cup of almond flour, and 1/4 cup of Parmesan cheese in a bowl.
  2. Add seasonings of your choice. I added 1 tbsp of habanero powder, 1 tbsp of pepper and 1 tbsp of garlic salt.
  3. In a separate bowl, mix two eggs and 1/4 cup of heavy whipping cream and mix well.

Putting it all Together

  1. Heat a saucepan of vegetable oil on high.
  2. Take the avocado rings out of the freezer and begin to coat them in the egg/whipping cream.
  3. Once fully coated, place them into the breading mix. Make sure the entire avocado ring is covered.
  4. TIP: I double coated all of my rings. Into the egg mix, into the breading then repeat. There was exactly enough egg mix to double coat.
  5. Place about 3-5 rings in the oil at a time. Flip if possible.
  6. Place them on a plate and let cool.
  7. Continue the last two steps until all avocado onion rings are fried up.
